Eggless cake pops

Eggless cake pops

I came across this recipe in a cookbook and thought of giving a try , but became big hit in my family . My son 1 and half years old loved the plain cake balls. So here we go

Ingredients
 
Eggless vanilla cake
250 gms

Butter cream frosting
¼ cup
Compound white chocolate
100gms
Compound Milk chocolate
100 gms
Colour sprinkles 
As needed
Lollypop sticks

Method
  1. Put the cake in a blender and make it into powder or you can use your hand also.
  2. Add the butter to the cake crumbs and mix it .
  3. Make small ball and put it into the fridge for half an hour  to become hard 
  4. Meantime melt the white chocolate and milk chocolate in a double boiler.
  5. Insert the lollipop sticks in the cake ball and dip it in the white chocolate and some in milk chocolate and add some sprinkles . 
  6. Put them in the fridge to set for 1 hour

Eggless donuts

Egg less donuts
This is my first cooking post in Gayathriscookspot and the recipe was suggested by  Sowma of Nivedhanam. when i saw this months challenge i got very exicited, which is egg less donuts . Plain donuts are my all time favorite but never thought the preparation is so simple. Here we go my friends .


Ingredients
All purpose flour - 2 cups
Dalda - 2 tbs
Warm milk- 1/2 cup
Sugar- 1/4 cup
Instant yeast - 1 tsp
Salt- a pinch
Curd - 2 tbs
Vanilla essence- 1 tsp
White chocolate
Colour sprinkles
Method
  1. In a bowl take all purpose flour and salt . Mix well 
  2. In another bowl take sugar,instant yeast,vanilla,dalda and curd .mix well Pour the yeast mixture to the salted al purpose flour mixture ,with help of a spatula pour milk and whisk well , until all flour and liquid mixture get completely blended together
  3. Cover it with a cling wrap and set aside for 1 hour or double in size 
  4. Then after 1 hour take the dough , dust some flour and cut it in to donut shapes 
  5. cover it and set aside for 1/2 an hour 
  6. After that heat oil and fry the donuts until brown 
  7.  Meantime melt white chocolate in double boiler method
  8. Dip the donut in the white chocolate and spray some sprinkles 
  9. Serve hot it will be amazing 
 Step by step preparation of Eggless Donuts 
Take all the ingredients


 Make it a soft dough and cover it with a cling wrap and set aside for 1 hour
Dust with some flour and roll it 1/3 inch thickness
cut it into donuts shape
Arrange it in a tray and cover it with a cling wrap and set aside for 1 hour
fry it in the oil till golden brown

Dip it in the white chocolate and spary some sprinkles

Eggless microwave vanilla cake with buttercream frosting

Egg less microwave vanilla cake with butter cream frost


 One day my schoolmate came to my home for inviting me for her marriage, i dint have anything to give them to eat so thought of doing this simple microwave cake .It was done in no time and the taste was very nice and i did few decorations with the readymade butter cream frosting. I did it in a hurry so you can see there is no perfection in the drawing. .So here we go...................

Ingredients 

Maida
200gms
Baking powder
1tsp
Baking soda
1/2tsp
Vanilla essence
1tsp
Condensed milk
1 can (400ml)
Butter
100gms
Soda
100 to 200 ml

Method
  1. Beat condensed milk and butter(butter has to be in room temperature) well.
  2. Sieve  maida, baking powder and baking soda at least 2 times.
  3. Add it to the butter and condensed milk mixture little by little and blend it well very slowly . Beating vigorously will make your cake hard.
  4. Add the soft drink to get the required consistency,which is slightly runny, don't tempt to add more as the result will be your cake will rise more and and finally drop down so take care of the quantity of the soda then. At last add the vanilla essence.
  5. Grease a microwave safe bowl and pour the batter.
  6. Microwave on high without covering it for 6 to 7 minutes.
  7. rest it in the ovan for few minutes then transfer the cake to a wired rack.
  8. The cake has to be completely cooled before icing 
  9. Decorate your cake with ready made frosting as you wish

Eggless white forest cake

Eggless white forest cake 







As a variation from black forest cake i wanted to try white forest cake using white chocolate .The cake came out well but as usual the fresh cream was again a disaster for me but some how i managed to decorate the cake. 

Ingrediants


All purpose flour 1 cup
Butter 1/4th cup
Condensed milk ½ can or 200 ml
salt a pinch
Baking powder ½ tsp
Baking soda ½ tsp
Vanilla extract 1-2 tsp
Cocoa cola
100-150ml                                


 Sugar syrup 


sugar
½ cup
Water
½ cup

 Icing


Fresh cream
200ml
Sugar
4tbs
 

Method
  1. Firstly finely sieve all purpose flour,salt,baking soda,baking powder and a pinch of salt.
  2. In a bowl whisk butter in room temperature and milkmaid  until smooth and fluffy,then add vanilla extract.
  3. To that butter and milkmaid mixture alternatively add sifted flour and lehar soda one by one and slowly whisk .
  4.  Take a baking tray and grease it with butter and dust it with little flour.
  5.  Pour the batter in the greased tray and bake for 30 to 35 mts depending on your microwave and also on your electric voltage condition.
  6. After 35 mts transfer the cake from your tray to a wired rack and let it completely cool down.
  7. When the cake is completely cooled we can start with the icing.
  8. Before we start icing keep the fresh cream, bowl and whisk in the fridge for atleast 2 hour.
  9. Then after 2 hours whisk the fresh cream with sugar and vanilla extract untill soft peaks.
  10. For sugar syrup take a pan add sugar ,water stir it until the sugar dissolves .
  11. Cut the cake into two equal parts,then apply sugar syrup,fresh cream and jam then place another half and apply sugar syrup then cover the cake with fresh cream .
  12. Atlast add whitechocolate shaving.........

Vanilla cup cake





 Ingrdients  

All purpose flour 1 cup
Butter 1/4th cup
Condensed milk ½ can or 200 ml
salt a pinch
Baking powder ½ tsp
Baking soda ½ tsp
Vanilla extract 1-2 tsp
Any soda (i used lehar soda)
100-150m


 Method 
  1. Firstly finely sieve all purpose flour,baking soda,baking powder and a pinch of salt.
  2. In a bowl whisk butter in room temperature and milkmaid  until smooth and fluffy and then add vanilla extract.
  3. To that butter and milkmaid mixture alternatively add sifted flour and soda one by one and slowly whisk .
  4.  Take cup cake mould ,if its a silicon mould no need to grease, if its a aluminum mould grease it with little butter and dust it with flour .
  5.  Pour the batter in the cup cake mould and bake for 20 to 25 mts depending on your microwave and also on your electric voltage condition.
  6. After 25 mts transfer the cup cake from your tray to a wired rack and let it completely cool down.

Valentines day cake


Vanilla cake with fondant icing 



Valentines day is a special day not only for lovers but also for all who wants to share their love and affection with their loved one.So i have prepared a heart shaped cake with fondant icing for my lovable husband and i love him so so much ................................

Ingredients


Maida
100 gms
Sugar
100 gms
Milkpowder
60 gms
Baking powder
1 tsp
Baking soda
1 tsp
Dalda
50 gms
Milk
 ¼ cup
Water
¼ cup
Curd
¼ cup
Vanilla essence
2 tsp

Butter cream icing

Butter
50 gms
Icing sugar
2 cups
Vanilla essence
1 tsp
Fondant
200 gms
Edible food colours
As needed

Method 
  1. Sift all dry ingredients at least  two times.
  2. Cream dalda and sugar .
  3. Shift all the dry ingredients to dalda mixture .Then add milk,water and essence give a good stir in one direction .
  4. At last add curd to the mixture stir slowly and transfer it to the greased mould 
  5. Bake it for 30-35 minutes or when you insert a toothpick it has to come clean.
  6. Let the cake cool down before icing .
  7. For icing mix butter,sugar and vanilla essence till you get a decorating consistency which is slightly thick. 
  8. First apply a fine coat of butter cream icing on the cake and refrigerate for 15 minutes, then roll the fondant into a clean and dry place dusted with icing sugar and decorate your cake as you wish and enjoy.
 
                                                                                         

The Pooh Bear

  I love pooh bear from my childhood .It looks very funny and the colors are very attractive so i started my fondant cake with pooh bear .I know it is not up to the original pooh bear but i have given my best .


Ingredients


Maida
100 gms
Sugar
100 gms
Milkpowder
60 gms
Baking powder
1 tsp
Baking soda
1 tsp
Dalda
