Hi friends this time i have come with different rice recipes which is done in no time. I wanted to share these recipes with you because, now a days my husband is leaving to office very early in the morning and i get so tensed to finish the complete lunch for him like sambar,rasam,poriyal etc but with these easy rice recipes am able to finish my cooking very soon without no tension. So i wanted to help some of my friends, who are having the same tension. Today's recipe is lemon rice, curd rice,peas and potato masala
1. Lemon rice
Ingrediants
Lemon

Boiled rice

2 cups

Salt

Turmeric

1/2tsp

For seasoning
Hing

A pinch

Oil

2tsp

Mustard seeds

1tsp

Channa dal

Method
- Boil the rice and let it dry for some time.
- Squeeze all the 3 lemon,salt add turmeric powder in it and keep it aside.
- Meantime heat oil in a pan add all the items that are in seasoning one by one and fry for some time except coriander leaves .
- once all done atlast pour the lemon and turmeric mixture and intermediately switch off the gas.
- pour this mixture on the rice and give a good stir and add coriander leaves.
2. Curd rice
Ingredients
Thick Curd

Boiled rice

1 cup

Milk

For seasoning

A pinch

Oil

Mustard seeds

1tsp

Ginger

Coriander leaves(chopped)

2 to 3 tsp

Method
- Boil the rice nicely like kanji.
- Add curd,milk and salt to the rice and give a good stir.
- Heat oil and add all the items in the seasoning list one by one except coriander leaves.
- pour this mixture on to the rice and stir well.
- Atlast add coriander leaves and serve.
3. Peas and Potato curry

Garam masala

1/2tsp

As needed

For seasoning

Method
- Boil potato and peas separately in a cooker for 2 whistles.
- Peal the potato skin and cut it into small pieces.
- Add turmeric,sambar powder and salt and set aside for atleast 10 mts.
- Meantime take a kadai, pour oil and let it heat for sometime add the items in seasoning one by one.
- Then add onion and fry for sometime until it turns transparent .Add tomato and stir until it become mushy.
- Add marinated potato and give a good stir then add boiled peas.
- Then add garam masala and 2tsp oil and stir it again.
- leave the mixture for 10 mts in low flame occasionally stirring it.
- Atlast add coriander leaves and serve.

Ghee biscuits
Ghee biscuits
Ghee biscuits by its name itself we can understand its melting biscuit .The taste and flour of the ghee is simply irresistible to stop with one and its a very easy to do recipe with only few ingredients. These cookies are typical Indian cookies. The Ghee(Clarified
Butter) makes it so special and I guess no one would say NO to this cookie. I
wanted to try these cookies, as it calls for Ghee and there is no baking soda
or baking powder used. So here we go
Ingredients
Ghee

1 cup

Powdered sugar
|
1cup

All purpose flour
|
1 ½ cup
|
Method
1.Preheat the oven to 180degree .
2.In a bowl,bring all the three ingredients(Ghee,AP flour and Sugar),and make a soft dough.
3.Make small balls out of the dough,slightly flatten it and place in the baking tray.
4.Bake the cookies for about 20-25 minutes .
5.Once done,remove from the oven and allow them to cool.Store the cooled cookies in an airtight container.

I
came across this recipe in a cookbook and thought of giving a try , but
became big hit in my family . My son 1 and half years old loved the
plain cake balls. So here we go
Ingredients
Eggless vanilla cake

250 gms
|
Butter cream frosting
|
¼ cup
|
Compound white chocolate
|
100gms
|
Compound Milk chocolate
|
100 gms
|
Colour sprinkles
|
As needed
|
Lollypop sticks
|

Method
- Put the cake in a blender and make it into powder or you can use your hand also.
- Add the butter to the cake crumbs and mix it .
- Make small ball and put it into the fridge for half an hour to become hard
- Meantime melt the white chocolate and milk chocolate in a double boiler.
- Insert the lollipop sticks in the cake ball and dip it in the white chocolate and some in milk chocolate and add some sprinkles .
- Put them in the fridge to set for 1 hour

Eggless donuts
Egg less donuts
This is my first cooking post in Gayathriscookspot and the recipe was suggested by Sowma of Nivedhanam. when i saw this months challenge i got very exicited, which is egg less donuts . Plain donuts are my all time favorite but never thought the preparation is so simple. Here we go my friends .
Ingredients
All purpose flour - 2 cups
Dalda - 2 tbs
Warm milk- 1/2 cup
Sugar- 1/4 cup
Instant yeast - 1 tsp
Salt- a pinch
Curd - 2 tbs
Vanilla essence- 1 tsp
White chocolate
Colour sprinkles
Method
- In a bowl take all purpose flour and salt . Mix well
- In another bowl take sugar,instant yeast,vanilla,dalda and curd .mix well Pour the yeast mixture to the salted al purpose flour mixture ,with help of a spatula pour milk and whisk well , until all flour and liquid mixture get completely blended together
- Cover it with a cling wrap and set aside for 1 hour or double in size
- Then after 1 hour take the dough , dust some flour and cut it in to donut shapes
- cover it and set aside for 1/2 an hour
- After that heat oil and fry the donuts until brown
- Meantime melt white chocolate in double boiler method
- Dip the donut in the white chocolate and spray some sprinkles
- Serve hot it will be amazing
Take all the ingredients
Make it a soft dough and cover it with a cling wrap and set aside for 1 hour
Dust with some flour and roll it 1/3 inch thickness
cut it into donuts shape
Arrange it in a tray and cover it with a cling wrap and set aside for 1 hour
fry it in the oil till golden brown
Dip it in the white chocolate and spary some sprinkles

Pineapple rava kesari
Pineapple rava kesari
This is a wonderful dessert using fresh pineapples.I love pineapples and i always wanted to try some recipes using pineapples so first time i tried this pineapple kesari .
Ingredients
Rava

1 cup

Pineapple
|
½ cup
|
Sugar
|
2 cups
|
Water
|
3 cups
|
Pineapple essence
|
1 tsp
|
Ghee
|
6 tbs
|
Cashewnuts
|
10 to 12
|
Kiss miss
|
1 tsp
|
Method
- Chop pineapples finely and mix it with two tsp of sugar and let it rest for at least 1 hour.
- Take a kadai heat 2 tsp ghee and fry cashew and kiss miss till golden brown and setaside.
- in the same ghee add pineapple mixture and saute for 2 minutes and add rava and roast for few mts.
- In another stove heat 3 cups of water.
- Pour the boiling water to the rava mixture from the sidescarefully while mixing it with a laddle.
- Mix well and close it with a lid and cook for 5-6 mts over low flame.When the mixture thickens add the sugar. and stir well.
- When you add the sugar the mixture will be watery and lumpsy . But its alright
- Add the remaining ghee and close the lid and cook foe 6-7 mts.
- Switch off the flame and add pineapple essence and cashew nuts, give a good stir.
Serve hot or cold.................................
