Ghee biscuits

Ghee biscuits

Ghee biscuits by its name itself we can understand its melting biscuit .The taste and flour of the ghee is simply irresistible to stop with one and its a very easy to do recipe with only few ingredients. These cookies are typical Indian cookies. The Ghee(Clarified Butter) makes it so special and I guess no one would say NO to this cookie. I wanted to try these cookies, as it calls for Ghee and there is no baking soda or baking powder used. So here we go




Ingredients 

Ghee
1 cup
Powdered sugar
1cup
All purpose flour
1 ½ cup

 Method

1.Preheat the oven to 180degree .
2.In a bowl,bring all the three ingredients(Ghee,AP flour and Sugar),and make a soft dough.
3.Make small balls out of the dough,slightly flatten it and place in the baking tray.
4.Bake the cookies for about 20-25 minutes .
5.Once done,remove from the oven and allow them to cool.Store the cooled cookies in an airtight container.

First time when i saw this cookies in baking obsession i thought "oh my god "this is very tough i cannot do this for sure. But for the second time i saw this cookies in "Gayathiri cookspot" with all necessary steps, i thought i can give a try so i have tried this cookie. But i dint get the perfect shape still i have to improvise.

Ingredients
For chocolate dough

Flour
1 ¼ cup
Baking powder
¼ tsp
Cocoa powder
¼ cup
Salt
A pinch
Butter
½ cup
Vanilla essence
1 tsp
Curd
¼ cup
Baking soda
A pinch

For vanilla dough         
Flour
11/2 cup
Baking powder
¼ tsp
Salt
A pinch
Butter
½ cup
Sugar
½ cup
Vanilla
1 tsp
Curd
¼ cup
Baking soda
A pinch

Method
Vanilla dough
  1. take a bowl mix flour,baking powder and salt.
  2. Beat butter and sugar well.
  3. Add baking soda in the curd and leave it for 5 minutes. After 5 minutes you can see bubbles in that add that mixture to the butter mixture.
  4. Add dry ingredients to the butter mixture stir well.
  5. Shape into asquare and cover it in a cling wrap and refrigerate for at least 2 hours.
 Chocolate dough
  1. In a bowl mix flour,baking powder,cocoa powder and salt.
  2. Beat sugar and butter well.
  3. Add baking soda in the curd and wait for 5 mts .Once the bubbles appear covert this mixture to the butter mixture.
  4. In the butter mixture add all the dry ingredients.
  5. Shape in to square and refrigirate for at least 2 hours.
Checker board cookie arrangement
  1.  Take vanilla dough, cut it into  two equal parts.Take one part and refrigerate the other half.
  2. With this half ,first shape in to rectangle and cut it into 9 equal stripes and refrigerate.
  3. Take chocolate dough cut it into two equal parts,take one half and refrigerate the other.
  4. With the first half roll in into rectangle and cut 9 equal stripes and refrigerate.
  5. For checker board arrangement place one vanilla strip in between two chocolate strip as the base layer, then place one chocolate strip in between two vanilla strip as the second layer and refrigerate.
  6. Then take the other half of vanilla dough,roll it in to square and place the block with more chocolate stripes in the middle and wrap the vanilla dough around the chocolate block and seal it and refrigerate.
  7.  Repeat the same procedure for other half of vanilla strips and seal it with chocolate dough .One block should contain 9 alternative strips thats the procedure.

Eggless coconut cookies

Eggless coconut cookies

This is a mouth watering cookie .It just melts in our mouth,my cousin taught me this recipe and I did few alterations but the end cookie was amazing .So here we go




 Ingredients

Maida
1 cup
Grated fresh coconut
1 cup
Butter
½ cup
Sugar
3/4th cup
Baking powder
1 tsp
Cardamon powder
½ tsp
Milk
1 tbs
Vanilla essence
1tsp

Method

1. Beat butter and sugar until creamy (butter should be in room temperature).

2. Add vanilla essence to the butter mixture.

3. Sift maida and baking powder at least 2 times and add cardamom powder.

4.  then add the maida mixture to butter mixture and mix it.

5. Add coconut and milk and make it a slightly sticky dough.

6. Take a gooseberry size dough round it and slightly flattern it.

7. Take baking tray and grease it with ghee and arrange the cookies leaving enough space between two cookies,because our cookies will double in size after baked

8. Preheat the microwave 180c and bake it for 15 mts or till the sides of the cookies turns light brown.

9. Enjoy the melting coconut cookies any time you wish.......

Eggless custard jam cookies


Eggless custard jam cookies 
By its name itself we can understand its a very sweet and tasty cookie . It's a cookie with a indent in the centre filled with jam and coated in sugar . These cookies are crispy and flaky . It goes well with hot tea.






Ingredients


All pupose flour
2 cups
Custard powder
½ cup
Butter
1 cup
Any sugar (confectioner sugar or icing sugar)
½ cup
Vanilla extract
2tsp
Any jam (diluted)
As per need
Sugar  (for coating)
½ cup



Method

1.Preheat the oven to 180C, line baking sheet over a baking tray and keep aside.

2.Sift together the all purpose flour and custard powder, add in the vanilla extract, keep aside.

3.Whisk the butter, confectioner's sugar together until they turn creamy, add in the flour-custard powder mixture and gently mix until it becomes a soft dough.

4.Shape the dough into small walnut sized balls, coat it in sugar and flatten them slightly.

5.Make a indent in the center of the cookie with your thumb . Heat the jam with little water. Be careful not to burn. Fill it in the indent.

6.Place them on the lined baking tray and bake for 15-20minutes.




Serve with a cup of tea or coffee.........................
