Pineapple rava kesari




This is a wonderful dessert using fresh pineapples.I love pineapples and i always wanted to try some recipes using pineapples so first time i tried this pineapple kesari .

Ingredients

Rava
1 cup
Pineapple
½ cup
Sugar
2 cups
Water
3 cups
Pineapple essence
1 tsp
Ghee
6 tbs
Cashewnuts
10 to 12
Kiss miss
1 tsp
 

Method
  1. Chop pineapples finely and mix it with two tsp of sugar and let it rest for at least 1 hour.
  2. Take a kadai heat 2 tsp ghee and fry cashew and kiss miss till golden brown and setaside.
  3. in the same ghee add pineapple mixture and saute for 2 minutes and add rava and roast for few mts.
  4. In another stove heat 3 cups of water.
  5. Pour the boiling water to the rava mixture from the sidescarefully while mixing it with a laddle.
  6. Mix well and close it with a lid and cook for 5-6 mts over low flame.When the mixture thickens add the sugar. and stir well.
  7. When you add the sugar the mixture will be watery and lumpsy . But its alright 
  8. Add the remaining ghee and close the lid and cook foe 6-7 mts.
  9. Switch off the flame and add pineapple essence and cashew nuts, give a good stir.


Serve hot or cold.................................

Egg less microwave vanilla cake with butter cream frost


 One day my schoolmate came to my home for inviting me for her marriage, i dint have anything to give them to eat so thought of doing this simple microwave cake .It was done in no time and the taste was very nice and i did few decorations with the readymade butter cream frosting. I did it in a hurry so you can see there is no perfection in the drawing. .So here we go...................

Ingredients 

Maida
200gms
Baking powder
1tsp
Baking soda
1/2tsp
Vanilla essence
1tsp
Condensed milk
1 can (400ml)
Butter
100gms
Soda
100 to 200 ml

Method
  1. Beat condensed milk and butter(butter has to be in room temperature) well.
  2. Sieve  maida, baking powder and baking soda at least 2 times.
  3. Add it to the butter and condensed milk mixture little by little and blend it well very slowly . Beating vigorously will make your cake hard.
  4. Add the soft drink to get the required consistency,which is slightly runny, don't tempt to add more as the result will be your cake will rise more and and finally drop down so take care of the quantity of the soda then. At last add the vanilla essence.
  5. Grease a microwave safe bowl and pour the batter.
  6. Microwave on high without covering it for 6 to 7 minutes.
  7. rest it in the ovan for few minutes then transfer the cake to a wired rack.
  8. The cake has to be completely cooled before icing 
  9. Decorate your cake with ready made frosting as you wish

First time when i saw this cookies in baking obsession i thought "oh my god "this is very tough i cannot do this for sure. But for the second time i saw this cookies in "Gayathiri cookspot" with all necessary steps, i thought i can give a try so i have tried this cookie. But i dint get the perfect shape still i have to improvise.

Ingredients
For chocolate dough

Flour
1 ¼ cup
Baking powder
¼ tsp
Cocoa powder
¼ cup
Salt
A pinch
Butter
½ cup
Vanilla essence
1 tsp
Curd
¼ cup
Baking soda
A pinch

For vanilla dough         
Flour
11/2 cup
Baking powder
¼ tsp
Salt
A pinch
Butter
½ cup
Sugar
½ cup
Vanilla
1 tsp
Curd
¼ cup
Baking soda
A pinch

Method
Vanilla dough
  1. take a bowl mix flour,baking powder and salt.
  2. Beat butter and sugar well.
  3. Add baking soda in the curd and leave it for 5 minutes. After 5 minutes you can see bubbles in that add that mixture to the butter mixture.
  4. Add dry ingredients to the butter mixture stir well.
  5. Shape into asquare and cover it in a cling wrap and refrigerate for at least 2 hours.
 Chocolate dough
  1. In a bowl mix flour,baking powder,cocoa powder and salt.
  2. Beat sugar and butter well.
  3. Add baking soda in the curd and wait for 5 mts .Once the bubbles appear covert this mixture to the butter mixture.
  4. In the butter mixture add all the dry ingredients.
  5. Shape in to square and refrigirate for at least 2 hours.
Checker board cookie arrangement
  1.  Take vanilla dough, cut it into  two equal parts.Take one part and refrigerate the other half.
  2. With this half ,first shape in to rectangle and cut it into 9 equal stripes and refrigerate.
  3. Take chocolate dough cut it into two equal parts,take one half and refrigerate the other.
  4. With the first half roll in into rectangle and cut 9 equal stripes and refrigerate.
  5. For checker board arrangement place one vanilla strip in between two chocolate strip as the base layer, then place one chocolate strip in between two vanilla strip as the second layer and refrigerate.
  6. Then take the other half of vanilla dough,roll it in to square and place the block with more chocolate stripes in the middle and wrap the vanilla dough around the chocolate block and seal it and refrigerate.
  7.  Repeat the same procedure for other half of vanilla strips and seal it with chocolate dough .One block should contain 9 alternative strips thats the procedure.
